Orange Frosted Carrot Cake
Ingredients
225g self-raising flour 
1/2 teaspoon ground mixed spice 150g dark soft brown sugar 
2 medium eggs 
150g grated carrots 
150g/ml corn or sunflower oil 
2 tablespoon milk 
Topping 
50g butter 
2 tablespoon orange juice 
Grated rind of half an orange 
225g icing sugar 
Method
Heat oven to 180C 160C fan 350F Gas mark 4 
Grease and line the base of approx 28 x 18cm tin or a brownie tin 
Place flour and mixed spice in a large bowl and mix 
Stir in sugar and carrots 
Make a well in centre and add the eggs, oil and milk 
Beat well with a wooden spoon until well blended 
Place in prepared tin and bake for approx 40 minutes 
Turn out from the tin and cool on a wire rack 
Topping 
Melt the butter, orange juice and rind in a saucepan. 
Beat in the icing sugar until smooth and swirl over the cake 
Cut into squares and serve
